RECIPE:
AMARETTI PEACHES
12 | small
amaretti cookies | 3 | ripe
peaches, halved and pitted | 3 | tsp.
sugar | 3 | tsp.
unsalted butter | 2 | cups
fresh whipped cream |
Preheat
the oven to 350 degrees F. Butter the bottom of a baking dish and set aside. With
a melon baller or a teaspoon, scoop out the red flesh from the center of each
peach, and arrange, cut side up, in the baking dish. Put the cookies in a food
processor and pulse until finely crumbled (or place in a plastic bag and crush
with a rolling pin). Fill the center of each peach with the cookie crumbs. Sprinkle
with ½ tsp. sugar and dot each one with ½ tsp. butter. Bake 30 minutes, until
the peaches are tender and the topping is crisp. Serve warm, topped with whipped
cream. |
